Day 17/30: Lentil soap

Lentil soap recipe is a nutritious and delicious comfort.
Let's learn how to make!

Ingredients:

• 1 cup dried green or brown lentils, rinsed and drained
• 4 cups vegetable broth
• 1 onion, chopped
• 3 cloves garlic, minced
• 2 carrots, chopped
• 2 celery stalks, chopped
• 1 can diced tomatoes
• 1 tsp dried thyme
• 1 tsp dried rosemary
• Salt and pepper, to taste
• 2 tbsp olive oil

Instructions

1. Saute onion, garlic, carrots and celery in olive oil until tender.
2. Add lentils, broth, tomatoes, thyme and rosemary.
3. Bring to a boil, then simmer for 30-40 minutes or until lentils are tender.
4. Season with salt and pepper to taste.

Day 16/30: Banana Bread

Banana bread recipes can be easily made at home.
Let's learn how to make it below!

Ingredients:

1 cup mashed very ripe banana
½ cup sugar
½ cup plain nonfat yoghurt
¼ cup margarine melted
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup chopped walnuts

Instructions:

1. Preheat the oven to 350°F
2. Combine mashed banana, sugar, yoghurt, margarine and eggs in a large bowl beat with an electric mixer on medium speed until well blended.
3. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Add the flour mixture to the banana mixture. Add the nuts and stir just until moistened.
4. Spoon the batter into the prepared pan. Sprinkle the top with sugar and more chopped nuts if you like.
5. Bake for about an hour.
6. Cool for 10 minutes in the pan on a wire rack. Then remove from the pan and cool completely on a wire rack.

Smoothie bowl recipe is a good nutritious and refreshing breakfast.
Easy to make!

Ingredients:

For the Smoothie:

- 1 cup frozen mixed berries (blueberries, strawberries, raspberries)
- 1/2 banana, sliced
- 1/2 cup plain Greek yoghurt
- 1/2 cup almond milk
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- Ice cubes

Toppings:

- 2 tablespoons granola
- 1 tablespoon chopped almonds
- 1 tablespoon chia seeds
- 1 tablespoon shredded coconut
- Fresh fruit slices (optional)

Instructions:

1. In a blender, combine frozen berries, banana, yoghurt, almond milk, honey and vanilla extract.
2. Blend until smooth.
3. Add ice cubes if you want a thicker consistency.
4. Blend again until ice is crushed.
5. Pour into a bowl.
6. Top with granola, almonds, chia seeds and shredded coconut.
7. Add fresh fruit slices (if using).

Day 14/30: Meatloaf

Meatloaf is a great recipe for a comfy-cozy dinner that fills you up and makes you feel good.

Ingredients:

2 pounds ground beef
½ cup plain breadcrumbs
½ cup diced onion
1 large egg, lightly beaten
1 cup barbecue sauce, divided
2 tablespoons Worcestershire sauce
1 tablespoon minced garlic
3 tablespoons Italian Seasoning
1 teaspoon kosher salt
1 teaspoon ground black pepper
chopped fresh parsley, for garnish

Instructions:

1. Preheat the oven to 350˚F
2. Line a loaf pan with foil and lightly grease both pan and foil. Leave plenty of overlap to make it easier to remove the meatloaf after cooking
3. In a large bowl, mix ground beef, breadcrumbs, onion, egg, ½-cup barbecue sauce, Worcestershire sauce, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but do not overmix or the meatloaf will be tough
4. Shape the beef mixture into a loaf in the prepared pan. Spread the remaining barbecue sauce over the top

Ingredients:

- 2 cups mashed potatoes (cooled)
- 1/4 cup all-purpose flour
- 1/4 cup grated cheddar cheese
- 1/4 cup chopped scallions
- 1 egg, lightly beaten
- 1 tablespoon butter, melted
- Salt and pepper to taste
- Optional: garlic powder, paprika or chili flakes for extra flavour

Instructions:

1. In a large bowl, combine mashed potatoes, flour, cheese, scallions and egg.

2. Mix well, adding melted butter, salt, pepper and any desired additional seasonings.

3. Divide mixture into 4-6 portions, shaping into patties.

4. Heat a non-stick skillet or griddle over medium heat.

5. Cook potato cakes 4-5 minutes per side, until golden brown and crispy.

Day 12/30: Grilled chicken salad

Grilled chicken salad recipe is easy to make and good for a healthy dinner!
It provides the perfect balance of protein and veggies.

Let's learn how to make!

Ingredients:

1/2 cup olive oil
1/4 cup red wine vinegar
2 tablespoons fresh lemon juice
1 tablespoon honey
1/2 teaspoon granulated garlic
2 cups mixed greens (lettuce, spinach)
Veggies (cucumbers, red onions, tomatoes)
Pepperoncini
Chicken brest
Salt and Pepper

Instructions:

1. Whisk marinade ingredients in a large bowl.
2. Add chicken, toss to coat.
3. Cover, refrigerate (30 min - 24 hrs).
4. Preheat grill/grill pan (medium heat).
5. Remove chicken from marinade.
6. Grill 5-6 min/side (internal temp: 165°F), then slice.
7. Combine ingredients in mason jar or blender.
8. Shake/blend until emulsified
9. Divide lettuce, tomatoes, cucumber, onion, olives, pepperoncini, and feta among bowls.
10. Top with grilled chicken.
11. Drizzle with dressing (to taste).

Ingredients:

For the crust:

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons melted butter

For the cheesecake:

- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1 cup sour cream

For the strawberry topping:

- 2 cups sliced strawberries
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice

Instructions:

1. Preheat oven to 325°F.
2. Prepare crust.
3. Beat cream cheese and sugar.
4. Add eggs, vanilla, and sour cream.
5. Pour into crust.
6. Bake until set.
7. Prepare strawberry topping.

Ice cream sundae is a type of ice cream dessert made up of ice cream with sweet sauce and a range of toppings.
Unlike normal ice cream, ice cream sundae has a number of other things added to the cream, such as toppings, whipped cream, nuts, sprinkles, and traditionally a maraschino cherry on top.

Ingredients:

2 tablespoons ice cream topping, syrup or sauce
2 or 3 scoops ice cream
¼ cup whipped cream
½ tablespoon chopped nuts
1 teaspoon sprinkles or Jimmies
1 or 2 ice cream wafers
1 maraschino cherry

Instructions:

1. Optional: pre chill your glass in the freezer
2. Get all your ingredients together. Take the ice cream out last.
3. Squeeze some topping generiously around the inside glass.
4. Add once scoop of ice cream
5. Add more topping on the first scoop of ice cream.
6. Add a second scoop of ice cream (you can add more)
7. Pipe the whipped cream on in a large cone shape.
8. Sprinkle on nuts, then sprikles.
9. Add the wafers.

Day 8/30: Chocolate chip cookies

Chocolate chip cookies are easy to make!

Ingredients:

3/4 cup salted butter, softened
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 tbsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup favourite chocolate chips

Instructions:

1. Preheat the oven to 350° F.
2. In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, granulated sugar, and brown sugar until light in colour and fluffy in texture.
3. Scrape the sides of the bowl and add in the egg and vanilla extract. Mix until well combined.
4. Add in the flour, soda, and salt. Mix until a soft but not sticky dough forms
5. Fold in your favourite chocolate chips.
6. Scoop the dough out into 1 1/2 tbsp portions and arrange on your cookie sheet. Can use parchment paper, a silicone mat or an uncreased cookie sheet.
7. Bake at 350° F for 8-10 minutes or until the cookies have spread and are just beginning to turn golden brown on the edges.

Pad Thai is a rice noodle stir-fry dish that is served with tofu, chicken, and prawns.

Ingredients:

1 pack of Rice Noodle (200g)
2 stalks of Green Onions
2 tbsp of Brown Sugar or Palm Sugar
2 ½ tbsp of Fish Sauce
Chicken breast cut into bite-sized pieces
2 Egg
Rice Venegar
½ tbsp Dark Soy sauce
1 cup beans sprout
Salt
Pepper
Peanut oil
Sear
Garlic
Ginger
Pad Thai sauce
Lime juice

Instructions:

1. Cook noodles according to package
2. Heat oil in a large wok
3. Stir-fry onion and garlic
4. Add mixed vegetables and cooked protein
5. Combine Soy sauce, palm sugar, fish sauce, and ginger
6. Pour sauce mixture into the wok
7. Stir-fry everything together
8. Add cooked noodle
9. season with salt and pepper

Day 6/30: Chicken Fajitas

Chicken Fajitas recipe is an easy, very healthy, and delicious weeknight meal.
It can be served with your favourite tortillas and homemade salsa.

Ingredients:

2 pounds chicken breasts (sliced into very thin 1 to 1.5” long strips)
2 Tablespoons lime juice
2 Tablespoons olive oil
1 Tablespoon minced garlic
½ teaspoon ground cumin
Species (chilli powder..)
Tortillas
Bell peppers
Onions

Instructions:

1. Marinate the chicken: whisk lime juice, olive oil and minced garlic in a medium bowl. Add the chicken and refrigerate for 10-15 minutes.
2. Heat large skillet over medium-high heat
3. Cook chicken: Remove chicken from marinade, cook 5-6 minutes per side.
4. Cook vegetables: Add onions and bell peppers, cook 5 minutes
5. Add cooked chicken to vegetables
6. Wrap tortillas in a dark paper towel, microwave 20-30 seconds.
7. Fill tortillas with chicken and vegetable mixture.

Today, I'm sharing a simple cinnamon roll Waffles recipe.

Ingredients:

- 2 cups of flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 teaspoons white sugar
- 2 eggs
- 1/3 cup melted butter
- 1.5 cups warm milk
- 1 teaspoon vanilla extract

Instructions:

1. Whisk dry ingredients in a large bowl
2. Whisk wet ingredients in a separate bowl
3. Combine wet and dry ingredients
4. Cook waffles on a hot waffle iron ( cook for 4-5 minutes until golden brown and crispy)

Today's recipe is Breakfast Burrito.
Burritos are one of my favourite foods and it’s fun to enjoy them for breakfast! These burritos are super easy to make!

Ingredients:

1 pound fresh chorizo sausage, casings removed
1 tablespoon oil
1 pound potatoes, diced
1/4 teaspoon paprika
salt & pepper to taste
1 tablespoon butter
1/4 cup onion, diced
1 jalapeno pepper, finely diced
8 eggs, lightly beaten
salt and pepper to taste
4 large(12+ inch) flour tortillas
4 ounces cheese (such as cheddar or jack), sliced or shredded
1/2 cup salsa verde

Directions:

1. Cook the chorizo in a large pan over medium heat until cooked through.
2. Heat the oil in a large pan over medium heat, add potatoes, seasoned with paprika, salt, and pepper, and cook until golden brown on all sides.
3. Melt the butter in a large pan over medium heat, add the onions and jalapeno and cook until tender, about 5 minutes, before adding the eggs, seasoned with salt and pepper, and cooking, scrambled style.

Today's recipe is a delicious and easy-to-make Overnight Oats dish, perfect for busy mornings!
A delicious dish make-ahead breakfast for busy mornings.

Ingredients:

0.34 cup milk
0.25 cup Greek yoghurt
0.25 cup rolled oats
2 teaspoons honey
2 teaspoons chia seeds

Instructions:

1. Combine all the ingredients (besides the fruit) in a jar, seal, and shake.
2. Open the jar and fold in the fruit.
3. Seal the jar and refrigerate overnight (or 4-6 hours)

- Slice of avocado
- Piece of smoked salmon
- Poached egg
- Spoonful of hollandaise sauce
