I don't cook them that often, but if I see them on a menu, the choice is obvious. The most delicious deruny I've ever tasted were in Zakarpattia: crispy, ruddy, with a delicate texture inside - just perfect.
🥔 If you want to make them yourself, here's a simple recipe :
✅ Ingredients:
- 5-6 potatoes
- 1 egg
- 1 small onion
- 2-3 tbsp of flour
- Salt and pepper - to taste
- Oil for frying
🔥 Preparation:
1. Grate potatoes on a fine grater, add grated onion, egg, flour, salt and pepper.
2. Mix well to make the mass homogeneous.
3. Spoon onto a preheated frying pan with vegetable oil, fry on both sides until golden brown.
4. Serve hot with sour cream or your favorite sauce.

Classic Ukrainian "deruny" - potato pancakes.

Ingredients:
Potatoes - 5-6 pcs. (medium size)
Onion - 1 pc. (optional, but makes the deruny juicier)
Egg - 1 pc.
Flour - 1-2 tbsp. (depending on the juiciness of the potatoes)
Salt, pepper - to taste
Butter - for frying
Sour cream - for serving
Preparation:
Peel the potatoes and grate on a fine grater. If a lot of juice is released, squeeze it out slightly.
Grate or finely chop the onion (it will give the deruny softness and aroma).
Beat in the egg, add flour, salt and pepper, mix thoroughly.
Heat the frying pan with oil. Spoon the potato mixture into small pancakes.
Fry over medium heat on both sides until golden brown.

Feast your eyes on what I consider the crowning glory of Ukrainian cuisine: syrnyky with sour cream and sweet jam.
Today cheesecakes are one of the most popular dishes, but earlier their ancestor, MANDRIKI, was prepared in Ukraine.
These are simple flatbreads made from cottage cheese, flour and eggs, baked in the oven or fried in a frying pan. The difference between mandriks is that they were often cooked with honey and poppy seeds, which made them especially aromatic.
According to legend, the Zaporozhye Cossacks took them with them on campaigns because they did not go stale for a long time.

Holubtsi were among the dishes my grandmother cooked when I was growing up (I used to eat only home cooked holubtsi that’s why even now I never buy semi finished ones, sometimes the cooking process takes a lot of time but the taste is definitely worth it)

✔️ 1 carrot, 1 onion

✔️ 3-4 eggs

Verguny are traditional Ukrainian cookies from Poltava region. Previously, verguny were treated to carolers, at vechernitsy. I remember the taste of verguny from childhood, my grandmother cooked them when we visited her, and it was a special treat. Because of their special shape, in my family we call them bunnies. At one time, they were cooked in almost all families. This simple, but such a hearty dish was loved by all children without exception. There are many different recipes! I prepare the dough with kefir or sour cream and use our family ingredient that makes verguny crispy, it is 1-2 tablespoons of vodka 🫶

Hey /travel-ukraine! After @kraken8.eth shared this with @rounds, I did some research about food from Ukraine, and now Chicken Kyiv is on my mind! I found a recipe summary: chicken breast, herbed butter, breaded, and fried. Sounds delicious! I would love to try it in Ukraine someday with my friend.

In the spring of 2022, war began in Ukraine, millions of people left their homes, many fled abroad.
Tragedy for people became a tragedy for pets, saving their lives people often abandoned their pets just letting them out on the street, not everyone could take them when leaving the country.
At my summer home in the suburbs, during the first months of the war, many pet dogs and cats appeared on the streets. People brought them here and let them out hoping someone would take them in. The animals were not ready for such a life, they didn't know how to get their own food, they died very quickly.
Someone's pet cat came to me, she was pregnant and gave birth to these 3 wonderful kittens.
The cat and 2 kittens died after another bombardment of our cottage village.
Only one survived, gray-white, I named him 🐈⬛ Tyson. He is a real fighter and now he is the main member of our family.
