Kotlets. ❤🙏 Ingredients: 350g ground beef or lamb, 3large potatoes very finely grated, 2onions also finely grated, 3cloves of garlic ( grated ) ,2tbs of chick peas flour ( Ardeh nokhodchi or chickpeas flour or white plain flour), 2 beaten eggs, 1tsp salt, pepper, turmeric ( each) , pinch of saffron if anyone would like to. Method: Mix them all well and allow it to rest for 1hour them panfry them on medium heat till they become golden brown.
Polo ,vmorgh zaferani ( saffron chicken and rice ) . Absolutely heaven ،This beautiful meal was a requested by MrA . This is one his favorite meal so I made it for him . Chicken cooked with saffron, salt, pepper, olive oil slowly cooked in the oven and served with rice.

As someone who's had the opportunity to connect with Persian culture through my husband and years of shared experiences, I feel grateful and enriched by this heritage.
Kababs are usually cooked with lamb since it is more accessible and affordable. Additionally, everyone has eaten lamb since childhood, so they are more accustomed to its taste and flavour.

In a Large fry pan add oil and chicken fry it in low med heat until the water dries and the chicken is lightly brown then add chopped onion salt, pepper,garlic continue cooking for about 10 minutes. Then add the rest of ingredients stir well and add two to 3 table spoon water cover top until the oil is separate. When completely done cooking transfer the chicken karayi in a platter garnish w/ chopped cilantro and peppers. Enjoy with naan and chatni.
