Today, Day… 9? Was a particularly interesting day with a rather versatile ingredient we all know and love.

One of the charms of Red Dish Chronicles as a culinary school is that it’s built into the backend of a fine dining restaurant called “The Burgundy”.
Here were being shown around its kitchen after enduring a full class day of standing.

I will remember Day One as the day we sat.
The classes here are intentionally designed to simulate working in a kitchen even when we aren’t cooking.
By that, I mean there are no chairs, yayy💀

It’s been a hell of a fast year. Won the crypto lottery (kinda), visited Rwanda, met my mom and lil sis for the first time in over 2 decades and came back to Nigeria for culinary school.
